Château Barbier is part of Château Boyrein estate – formerly the domain of the lords of Gourges – which is located in the Sauternes terroir and appellation, in the municipality of Fargues. As early as 1868, its wine was considered to be one of the best “Crus Bourgeois” of the area.

Harvest
By hand with 4 to 5 successive selections as “botrytis cinerea,” the famousrot, appears.

Vinification
After pressing and settling, grapes are brought to fermentation under temperature control. Selected batches are then matured in vats for one year before being blended.

Tasting notes
Beautiful golden colour with intense aromas of dried fruits such as apricot and quince, as well as white flowers such as acacia. Well-balanced in the palate, good volume with honey and floral aromas.

Suggested dishes
A great match with with duck foie gras and onion jam, or roasted quail
